Potato Rice



This is my daughters recipe. Yesterday after returning from school, she want to prepare her self. As a teenager she tried to make experiment, for my surprise she did wonder. I hope you also enjoy it. Actually very easy to make, if the rice is ready.

Ingredients:

-1 cup rice
-11/2 cup water
-1 big potato
-1 big onion
-1 tsp coriander powder
-1 tsp red chili powder
-4 crushed pepper
-1/4 tsp black salt
-salt
-pinch of sugar
-1 tsp chili sauce
-1 tsp soya sauce
-1 tsp tomato sauce
-3 tbsp oil
-mint leaves
-coriander leaves

Procedure:

-cook rice in a pressure pan or separately with 1:11/2 ratio (rice:water).
-let it cool and make it loose.
-take a thick wide pan with oil and heat it.
-add finely chopped onions and saute till change colour.
-add potato pieces (small) and fry till brown colour.
-add coriander powder, salt, sugar, black salt and pepper.
-add rice and mix well. cook on high flame.
-add soya sauce, chili sauce, tomato sauce and again mix well.
-Now sprinkle little red chili powder and garnish with finely chopped mint and coriander leaves.
-ready to eat.

Vegetable Fried Rice

Those who doesnt like to eat rice alos like to eat rice items. One of such items is fried rice. You can make it as spicy as you can. As we use vegs. good choice for lunch box also. Prefer to eat with gravy or/and ritha.

Ingredients:
            -1 cup rice
           - 1 onion (medium size)
           - 1 carrot (small size)
           - 2 or 3 beans
           -1/4 cup peas(opt)
           - 1 chilli
           - curry leaf
          - coriander leaves
           - soya sauce
           -chili sauce
           - ajinomoto (Optional)
           - black salt
           - ¼ tsp garam masala
            -red chillies powder
            - sugar
            - 3 tbsp oil
            - 1 tsp ginger garlic paste

Procedure:

 -cook rice and make it cool.(rice:water=1:11/2)
 -Then make the rice loose and add 1 tsp oil.
 -In a wide pan take 1tbsp of oil and heat it.
-Fry finely chopped onions, chillies and curry leaf. Add ginger + garlic paste.
-Add finely chopped carrot and beans. add peas and saute till they turn semi cooked.
-Add rice  and fry till the rice becomes hot on high flame. If you feel the rice is very dry, you can add 1 more tbsp of oil to it. Now add 1tsp soya Sauce, 1 tsp chili sauce, pinch of ajinomoto,  pinch of sugar , salt, garam masala, black salt and corriander leaves.Stir continuously for 3 more min.  
-As per your taste you can sprinkle red chili powder.
-Ready to eat.

TIPS:
-If soya sause is not available, you can add ¼tsp of lemon juice.
 - While cooking the rice, you can add 2 tsp of oil for better result.
-If you want more spicy rice, while frying onions, add 2 cloves and one cinnamon. Before mixing rice add corriander powder (Dhania Powder)

Palav Rice



How many rice items may be there, every one has its unique taste.  Palav is very easy to make and preferable even by those who doesnt like much spicy food. Serve palav with palav kurma than with other gravy.

Ingredients:

- 2 cups rice
- 1/4 cup peas (fresh/dry)
- 1 medium size carrot
- 2 medium size onions 
- 2 green chillies
- 1 tsp ginger-garlic paste
- 2 bay leaves
- 4-7 cloves
- 1/2 inch cinnamon
- coriander leaves (opt)
- 2 tbsp oil
- salt
- 3 cups of  water

Procedure:

- wash the rice and soak in water for 1/2 hr.
- if you are using dry peas, soak for 6 hrs and cook into 1/2 boiled.
- chop all the vegetables.
- take oil in a deep pan/ pressure cooker and heat it.
- add cloves, bay leaf and cinnamon and fry for 3 min.
- add onions and saute till they turn brown.
- add ginger-garlic paste and saute
- add carrot, peas and chillies and saute for a while
- add water and salt. 
- when the water is boiling add drained rice, cover it and put whistle.
- after 2 whistles, turn off the flame and waith for 10 min.
- garnish with chopped coriander leaves
- serve with pallav kurma.

Masala Kichidi



Those we eat rice certainly knows kichidi andat the same time shows disinterest towards it. But this kichdi is really a tasty one. No need to hesitate.In this method we dont use moong dal.

But the only thing is prefer to eat hot hot along with dalcha.

Ingredients:

-200 gms rice
- 2 tbsp oil
-1 big onion
-1 small tomato
- 2 chilies
- 1 tsp turmeric
- salt
-water

Masala Ingredients:


-1 cup grated dry coconut (or fresh coconut)
-1 small onion
-1 1/2 inch ginger
-10 garlic cloves
 -1 1/2tsp coriander powder
-1/2 inch cinnamon
-1 clove
-2 cups chopped  corriander leaves


Procedure:


- wash the rice and soak for 1/2 hr in water.

- grind all masala ingredients into a fine paste.
- in a deep pan /pressure pan take oil and heat it.  Saute the chopped onions into light golden colour.
- add masala paste and turmerric and saute till the oil comes out.
- add tomato pieces and chilies and saute till the tomatoes turns little soft.
- now add water in a 1: 2 ratio to rice. When the water is boiling add drained rice and salt and cook for 2 whistles.
- wait for 10 min. Mix well. If needed add salt and serve with dalcha.

Tips:


- this kichdi must be little soft when compare to other rice items.So prefer 2 parts of water.

Coconut Rice

No need to tell the rich flavour of coconut. Though it is heavy in calories, rich in taste . So occasionally we can prepare. There are two methods. First I am posting the easy one. Both are of different taste.
INGREDIENTS

1 cup rice
1 cup grated coconut
2 or 3 chillies
1 small carrot (optional)
1 tsp salt
1 tsp turmeric powder
few coriander leaves (optional)
salt

TEMPERING

1/2 tbsp oil
4 pepper seeds
few peanuts
cashew nuts
1 tsp channa dal
1 tsp split urad dal
1 tsp thill (optional)
1 red chilli (optional)
1/4 tsp mustard seeds
1/4tsp sesame seeds
1/4 tsp jeera
3 curry leaves

PROCEDURE

-wash the rice and cook it with 2 cups of water either in pressure cooker or rice cooker.
-let it cool.
-now make the rice loose. Add pinch of salt. Mix well.
-take oil in a wide pan (khadai) and heat it. Add pepper seeds, peanuts, cashew, channa dal, urad dal, mustard seeds, jeera, red chilli one by one with a little gap. Fry them till the urad dal turns into light yellow colour. Now add curryleaf, cut chillies and fry till the chillies turn into pale. Now add sesame seads and  turmeric powder. Add grated carrot and coconut. Add little salt.Dont fry after adding coconut.
-now add this to rice and mix well.
-add finely chopped coriander leaves.
-taste it. If necessary, add salt .
-ready to eat.

TIPS

-if you want the rice to be like biryani rice, then take 13/4 cups of water instead of 2 cups and add 1 tsp of oil. 
-if you like to eat little spicy, fry 3 cloves and 1/2 inch dalchini along with pepper.
-use fresh coconut only.
-you can add peas also.

PALAK (SPINACH) RICE

                                  We know the story behind the cartoon Papaya .To encourage  children eating the spinach try  this Item . So for the children this is a perfect receipe.
INGREDIENTs:
        -1 cup rice
          -1 cup spinach pure(appx)
          -1 tomatoes
          -1 big onion
          -2 green chillies
          -1/2 tsp ginger, garlic paste
          -2 cloves
          -1/4 inch cinnamon piece
          -1 bay leaf (Tej patta)
          -1/4 tsp garam masala
          -1/4 tsp coriander powder
          - Salt
          -pinch of sugar
          -coriander leaves(optional)
          -curry leaves
          -4 mint leaves
          -2 tbsp oil
          -ajamimoto (optional)
          -red chilli powder (Optional)
          -1tsp soya sauce(optional)

PROCEDURE:
          -Wash rice and keep it aside.
          -Finely chop the onion and chilly.
          -Dip the spinach leaves in hot water for a min and stain.
          -Grind spinach and tomato into fine paste.
          -Take pressure cooker  (Pan) or rice cooker and heat it with oil. Add cloves, Cinnamon and bay leaf. Add onions . Fry till turns brown . Add Ginger, garlic paste. Fry till oil comes out. Fry mint and curry leaves.
          -Add spinach puree. Fry till oil comes out.
          -Add sugar, salt, garam masala, coriander powder, rice and fry  till the wet  goes.
          -Now add chillies and 1 ¾ cup water and cook it.
          -Before serving, sprinkle red chili powder, ajanimoto ,coriander leaves and soya sauce and heat for a while.
          -Now item is ready to serve.
          -Serve with raitha.

JEERA RICE

                                                     
Whoever likes rice items, will like jeera rice. My sister-in-law daughter likes my jeera rice so much. Whenever she meets me, I have to prepare this item for her.We can cook this jeera rice item in two different ways. One is like in fast food centers. The other one is the easy way. You can try this.

Ingredients:
-  ¼ kg basmathi rice (or ordinary rice) (Serves for 4 persons)
 -  2 tbsp of Jeera
 -  1 tsp jeera plus shajeera powder
 -   1 tsp ginger plus garlic paste
 -   1 big onion
 -   Mint leaves
 -   Curry leaves
 -   Corriander leaves
 -    3  chillies
 -    Salt
 -    black salt
-     1 tsp soya sause or ¼  lemon juice
-     pinch of Ajinomoto  (optional)
-     4 cloves
-     ½ inch cinnamon
-     1 bay leaf (optional)
-      pinch of sugar

Proceedure
  -   Measure the rice with  a glass and soak for ½ hour.   Cut onion into small                   
       Pieces.
    -      Heat rice cooker or pressure cooker with the oil.
    -      Add  jeera, cloves, cinnamon, bay leaf.  After fry,  add curry leaf, mint,
            Onion one by one. Once the onion turns brown , add ginger and garli
            Paste. Fry till the oil comes out.
    -      Now add stained rice and fry for 2 minutes.
    -       Add jeera and shajeera powder , sugar, salt, chillies, black salt, and fry one
            More minute.
     -      Add water  double to the rice. (One cup rice means 2 cup water.)
     -       Cook  the rice.
     -       Before serving, again keep it on the  flame, sprinkle soya sause ,ajinomoto      
              And a coriander leaves (cuts) and mix it well.
      -      Now item is ready to eat. We can eat with raitha or dalcha or as you wish.
TIPS: 
      -     Instead of jeera plus shajeera powder, you can use  jeera powder only.
      -     If you want this item little spicy, add 1 tsp of corriander powder.

HOT PONGAL

                       Whoever knows about Tamilnadu, they should know about pongali also. It is both in sweet and spicy (hot) tastes. Even in south Andhra districts  this is  familiar item. But procedure differs for Tamilnadu. It is tasty one and we have to eat when this is hot. Otherwise it tastes like rice with dal. Some people like to eat it with coconut chutney, some with ginger chutney, while some with Sambar.
INGREDIENTS:
           -1 cup rice
            -3/4 cup split moong dal (Polished)
            -1/4 tsp jeera
            -20 pepper
            -1/4 inch smashed ginger (1/4 tsp ginger powder)
            -1 chilly
            -curry leaf
            -1 tsp oil.
            -1/4 tsp split urad dal
            -pinch of hingh (Optional)
            -salt
            -cashew (Optional)
            -1tbsp ghee (Optional)
            -water

PROCEDURE:
-Soak the rice and moong dal together for about one hour( For better taste)
 -Take a pressure cooker (Or ant thick vessel) with oil and heat.
 -Fry pepper till it splits.
 -Add jeera, urad dal, curry leaf, ginger,  hingh, and cut chilly one by one.

 -Now stain water from rice and dal. Add to the above ingredients. Fry for 5
 min. Add salt.
 -Add 5 cups of water. (1:5) .

-Put the lid and whistle. Cook on low flame.
 -When 3 whistles come, switch off the flame.( If you are cooking in a vessel, cook till the rice becomes soft.)
 -After 5 minutes take off the whistle and check the thickness. The rice will slowly becomes thick after removing from flame. So it should be little watery. If necessary add some water and cook on high flame till the bubbles comes from inside. (After 3 whistles dont wait for more than 5 min to keep it again on the flame as the rice loose its softness.)
 -Meanwhile fry cashew in the ghee and pour it in the rice. If you are not adding cashew, then add ghee directly. By the time you take out from the flame, the rice must be little bit liquid form.
 -Serve very hot. Serve little at a time and always cover the vessel with lid, so as to serve and eat very hot and tasty.

TOMATO RICE

                                 Andhra is famous for rice and so also for rice recepies. Generally kids does not like to eat rice with curries even 1 time a day. Usually children doesn’t like to eat tomato in the curries.   For such children this Item is one alternative to try. So for the children this is preferable receipe.
INGREDIENTs:
         -1 cup rice
          -2 big tomatoes
          -1 big onion
           -2 green chillies
          -1/2 tsp ginger, garlic paste
          -2 cloves
          -1/4 inch cinnamon piece
           -1 bay leaf (Tej patta)
           -1/4 tsp garam masala
          -1/4 tsp coriander powder
           - Salt
           -pinch of sugar
           -coriander leaves
           -curry leaves
           -4 mint leaves
            -2 tbsp oil
           -ajamimoto (optional)
            -Red chilli powder (Optional)
PROCEDURE:
          -Wash rice and keep it aside.
          -Finely chop the onion and chilly.
          -Grind tomato into fine paste.
          -Take pressure cooker  (Pan) or rice cooker and heat it with oil. Add cloves,
                    Cinnamon and bay leaf. Add onions. Fry till brown colour comes. Add
                    Ginger, garlic paste. Fry till oil comes out. Fry mint and curry leaves.
          -Add tomato puree. Fry till oil comes out.
          -Add sugar, salt, garam masala, coriander powder, rice and fry it till the wet   
                    goes.
          -Now add chillies and 1 ¾ cup water and cook it.
          -Before serving, sprinkle red chili powder, ajamimoto .
          -Now item is ready to serve.
          -Serve with raitha. 
Tips:
-you can add potatoes/carrots/peas along with onions.
-if you are having cooked rice,instead of adding rice and water add loosed cooked rice and saute for 5 min.
-for different taste add soya sauce also along with red chili powder.

EGG FRIED RICE

whether vegetarians or non.vegeterians, now-a-days most of the people eating egg . Doctors are also advising to take egg. So this is really a healthy food for children. Easy to make for dinner.  For parties also I prefer this among several items.

Ingredients:
            -3 eggs
            -1 cup rice
          - 1 onion (Medium size)
           - 1 chilli
           - curry leaf
          - coriander leaves
           - soya sause
           -ajinomoto (Optional)
           - black salt
            -1tsp jeera
           - ¼ tsp garam masala
            -red chilli powder
            - 2 tbsp oil
            - 1 tsp ginger garlic paste

Procedure:

 -cook rice and make it cool.(rice:water=1:11/2)
 -Then make the rice loose and add 2 tsp oil.
 -In a wide pan take oil and heat it.
-Add jeera and fry.
-Fry finely chopped onions, chilli and curry leaf. Add ginger + garlic paste.
-Now beat eggs in the pan and go on stirring it. Boiled egg york must be in small pieces. Otherwise cut it with stirring spoon into small pieces .
-Mix rice in it and fry till the rice becomes hot on high flame. If you feel the rice is very dry, you can add 1more tbsp of oil to it. Now add soya sause, ajinomoto,  pinch of sugar , garam masala and corriander leaves.
-As per your taste you can sprinkle red chili powder.
-Ready to eat.

TIPS:
