Methi Chaman


Dont hesitate on seeing methi.  It not at all tastes bitter more over it taste yummy as we are using panner as well as cream. My children like it so much that they eat one more chapati. So easy to make as well. If you like sweet taste add more sugar than my measurements.

Ingredients:

1 cup chopped methi
1 cup grated paneer
1 med onion
2 chilies
1/2 tsp garam masala
1/2 tsp red chili powder
1 tsp sugar
1 cup whole cream milk/condenced milk
1/4 cup kowa/malai/cream (opt)
salt
coriander leaves (opt)
2 tbsp oil/butter

Paste:
1/2 inch ginger
2 cloves garlic
1 inch dry/fresh coconut
2tsp watermelon seeds
2 tsp kus-kus
1 tsp sesame seeds
6 cashew
2 tbsp milk

Procedure:

-make a fine paste of all the paste ingredients.
-take oil in a sauce pan and heat it.
-saute finely chopped onions. 
-when they turn golden brown add  methi and fry well. It has to loose its raw smell.
-add the grinded paste and saute till oil comes out.
-add paneer and saute for a while.
-add salt, slit chili, red chili powder and sugar and saute for a while.
-add milk and cook keeping the lid till the oil come out with occasional stirring.
-add cream and wait for the oil to come out. It shouldnt be watery. Check the taste .
-garnish with chopped coriander leaves.
-yummy yummy methi chaman is ready to serve.

Tips:

-If  paneer is not available, you make it at home. No need to grate. You can use it directly. -before using soak in the water and squeeze the paneer.
-if you want rich taste add more and more cream.
-in the grinded items if any of the watermelon or kuskus or coconut or sesamseeds not available substetute the quantity with other ingredients.
-you can skip coriander leaves
