Palli Pakodi
Palli/ peanut/ verusanaga kayalu/ groundnut are very healthy one. We generally mix them with other ingredients in our recipes but direct recipes are very less. Palli pakodi is very tasty snack. Easy to make. We can store it for 15 to 30 days in an air tight container. Children like them very much.
Ingredients:
1 cup palli
1/2 cup besan flour
1tbsp rice flour (opt)
1 tsp ginger garlic paste
1tsp red chili powder
1 tsp chat masala
1/4 tsp baking soda (opt)/ eating soda
salt
oil for deep fry
water
Procedure:
-if the palli or soft fry in a deep pan without oil on low flame. When they are crispy remove them.
-either after they became cool or little warm mix ginger+garlic paste and salt.
-add chat masala, red chili powder and baking soda and mix well.
-now sprinkle little besan flour on them and mix .
-sprinkle little water and mix.
-again sprinkle besan flour. Make sure the layer on the palli is sufficient. If necessary again sprinkle little water and besan.
-check the taste of palli and if needed add more spicy ingredients.
-now sprinkle rice flour on them like dusting so that they will be separated.
-heat oil in a deep pan.
-when it is hot drop the palli and fry on low flame for 5 min. Then increase the flame and fry. Dont fry till the palli are crispy. After removing slowly they become crispy. If the out layer is crispy it is enough.
-your evening snacks are ready to serve.
Tips:
-depending upon your taste you can skip ginger paste or chat masala.
-if you are not having rice flour, dust with corn flour or besan.
-at any time be sure the husk shouldnt be pealed. The flour sticks nicely to husk alone. So never squeeze while mixing. Mix lightly.
-if you sprinkle more water the flour will become like batter and come out or they become like bujji. So sprinkle very little water at a time.
