Sabudhana (Sago) Pakoda

Sabudana pakoda is really a typical snack with hot and sour taste and soft and crunchy texture.
               Ingredients:
                                   -1 cup sabudana
                                   - 2 cups sour curd
                                   -3 curry leaves
                                   -2 or 3 chillies
                                   -1 tsp jeera
                                   -1 onion (big size)
                                  -1 tbsp rice flour (opt)
                                  -1 cup maida
                                  -oil (for deep fry)
                                  - red chili powder(opt)
                                  -salt
                Procedure:
-Soak dana in curd,  preferebly sour one, for 4-6 hours.
-Cut onion, chillies, curry leaves, into small pieces. Add them to the sago. Add jeere, rice                        flour, red chili powder and salt .
-Now add maida and mix thoroughly. The consistency must be thick enough to drop in the oil. If  maida quantity is more the saga taste misses.
-Heat oil in the deep pan.
                - You can drop small small pakodas till they occupy 50% of oil in the pan. When they are                         slightly colour changed increase the flame. When they are in golden colour remove them.
-Serve with chutney or karapoddi or sauce or you can eat plain also.
Tips:
                 - Sour curd taste much than fresh curd.
-Try one for the first time . If they are hard, sprinkle little water. If they are oily, the batter must be little thick. Add 1tsp of rice flour or maida.
