Puri

                                            
One of the tastiest food item made up of wheat is Puri. Everybody even the children like to eat. So the best option for any time. If the puri puffs its taste is marvelous. You can’t even control the count.
Ingredients:
          - Wheat flour 1 cup
          - Maida 1 cup(opt)
          - Sujji rava 2 tbsp
          - Pinch of salt
          - Oil for deep fry

Procedure:
          - In a deep bowl take 3 flours, salt, and 2 tsp oil and mix it well.
          - Now slowly add water and make stiff dough.
          -  cover it and keep it aside for 1-2 hr.
          - Now squeeze the dough finely.If you feel it hard you can beat it.
          - Make it into small balls.
          - Now spread little Maida on the platform, dust the balls in maida and roll the ball with the rolling pin.
          - The puri shouldn’t be much thin (or) much thick. (Which are spreaded)
          - Take oil in a deep frying pan. And heat it till little steam comes.
          - Lower the flame and  drop one puri  into oil slowly.
          - Press it lightly with the spoon.
          - Now slowly the puri puffs. Turn it and wait till it turns to light golden colour.
          - Remove it from the oil and fry the next one.
         -Serve the puri with curry.

Tips:
- If the oil is over heated the puri turns into dark brown immediately and the taste also changes.
- If the heat is very low the puri doesn’t puff and even absorbs oil.
- If the dough is too soft  it doesn’t puff. Even if it puffs it becomes flat immediately after removing from  oil.
- If the dough is too hard. While rolling the edges will break.
- If the puri is too thin or too fat the puri doesn’t taste nice.
- Use holes spoon to remove the puri from oil.
