Babycorn Manchuria




As corn is good for health, better to take in as many way as possible. To make children interesting prepare babycorn  manchuria.

Ingredients:

             -2 cups babycorn pieces
            -maida
            -corn flour
            -salt
            -ginger + garlic paste
            -1 tbsp rice flakes (poha)
            -2 or 3 green chillies
            -pinch of pepper powder (Optional)
            -1/4 tsp of baking soda
            -1/4 cup curd
            -1/4 tsp soya sauce
            -1/2 tbsp tomato sause
            -pinch of black salt
            -1/4 tsp garam masala
            -red chillies powder
            -1 big onion
            -coriander leaves
            -curry leaves
            -cashew (optional)
            -oil for deep fry
            -2 garlic cloves
            -ajinomoto (optional)

Procedure: 
          -cut babycorn into medium size rectangular, thin pieces. Boil the water and
            cook  them for 3- 5 minutes and drain out water. Keep the stock aside.
           (babycorn has  to be half boiled.)
            -Mix corn flour and Maida in 1 ½  : 1 ratio.
            -In the babycorn vessel add ginger garlic paste, poha, salt, baking soda, pepper                         and mix well. Now slowly add corn flour + Maida till it sticks to all pieces. The  batter               must  be like pakoodi batter. If necessary sprinkle some water.
            -Heat oil in a deep pan and put the babycorn pieces into the oil and fry                                          till golden colour . Remove them from oil.
            -Beat curd and add stock.
            -In a wide pan take 1 tsp of oil and heat it. Fry finely chopped onions,  chillies,                            garlic, curry leaves and saute for a while. Add soya sauce and tomato sauce.                               Add beated curd. When it is boiling add fried babycorn and stir it till the curd is                         absorbed by the cauliflower.  
            -Now sprinkle black salt, ajinomoto, garam masala, coriander leaves and red
             chilly  powder as per your taste.
            - Now ready to serve.

TIPS:
           -If you want spicy manchurias, add chilli paste in the batter.
            -If fried manchurias are hard add little water to the batter.
            -If wet manchurias are not as wet as per your taste, next time
             add more water to the curd.
             -babycorn manchurias are to be little crispy than cauliflower manchurias.
            -You can eat fried manchurias directly as pakodas also.
