China Grass Halwa

Agar-Agar,  popularly known as China grass, is very good for digestion and body heat control. Moreover it is a very soft sweet , somewhat like icecream .so children like it very much. If you like flavoured ones, in the market there is availability of many flavours in powdered shape. But I always prefer plain grass.

Ingredients:

            - China grass 10 gm
            - Creamed milk 1 ltr
            - Sugar
            - Cashew, almond& cardamom

Procedure:

            - Wash the china grass. Cut it into small pieces.
- In a deep vessel (1/2 ltr quantity) take Agar-agar pieces and ½ cup water. Cover it and keep it on low flame. After 5 min stir it continuously till it melts in water.
- Once it becomes a fine paste add boiled milk. Let it cook for 15 min.
- Then add sugar as per your taste and cardamom powder as well. The sweetness must be more than your taste.
- Let it boil with occasional stirring.
-  After 15 min take a spoon of liquid into the plate and check it after 2 min. If it becomes thick and comes out of plate the boiling is enough otherwise let it boil for a few more min. Again follow the same procedure to get the finishing touch.
- Once it is ready to remove increase the flame and let it get high bubbles.
- Remove it from the flame and beat it with egg beater till it gets nice foam on.
- Pour it in highly edged plate and let it cool.
- After 10 min garnish with dry fruits. Once it becomes stiff cut it into the shapes you like.
- For better taste keep it in the fridge and serve.

Tips:
            - For the first time prepare with 25gm china grass with ¼ ltr milk.
            - If you need the pieces much thicker lessen the milk.
            - You can also add essence and food colors.
