MYSORE BONDA


 May be the name resembling its origin is Mysore but I am not sure of it. But it is a very famous recipe in our Andhra. If you visit Andhra hotel you may be afraid of its size but it is very tasty .As It puffs’ three times to the batter size it looks so big. As per your wish you can change the size of the ball.


Ingredients:

 1cups maida
 1 cup rice flour
1 cup sour curd (approx)
½ inch ginger
1tbsp rice flakes/cooked rice
2 or 3 Green chillies
1 onion (medium size)
¼ tsp eating soda (mitha soda)
1tsp jeera
Salt (as per taste)
Oil ( for deep fry
Curry leaves (optional )

Procedure:


 -Make ginger ,chilly paste.
 -chop onions into  small pieces.
 -except oil & curd take all the ingredients into a bowl.          
-add sufficient curd to make a thick batter.
 -cover the bowl with a lid and keep it aside for more than 2 hr.
-heat oil in a deep pan.
- Drop small batter balls in  the oil and fry on low flame. Once the    oil in the pan looks plane its time to increase the flame. Other         wise they may absorb oil or may not puff.  Turn frequently.When they are in golden colour remove  them from oil.        
 -Tasty  tasty  Bondas are ready.
- Serve them with coconut chutney or any other combination as per your taste.

Tips:


 - If the Bondas are hard to touch add more curd/water to the batter. Try to use only curd to make batter.
If they are oily add some more maida to it.
If the curd is of full cream milk ,while making batter use some water. Other wise they will be oily. 
- If you like little bit crispy add more rice flour.

- More the stretchy bondas more tasty.
 - If the bonds skin is like folded add more baking soda.
 - If the batter is too thick, they may blast in the oil. So check  one in the oil.
-prefer cooked rice to rice flakes.

-Soak 1tbsp urad dal for 4 hrs; grind it and mix with the flour at the time of making batter. This gives a different taste. If you are having dosa batter you can use a ladle of it.
-Even if for the first time they are not fine as per the tips try once again. I am sure this time you will be perfect.
