Pav Bhaji


Pav Bhaji, a mouth watering recipe. I am sure there is no Indian who doesnt like this. Usually children doesnt like healthy food. But here this statement is quite wrong. As this is made up of various vegs. and bun whole family can enjoy it. So I think you wont hesitate to try this.

Pav Bhaji bun is available in super markets or bakery.If not so enjoy it with ordinary bun or bread. Dont try with milk bread. You can eat even with chapathi also. My children like to eat it without any combination as a chat also.

You can use any veg.- like potato, carrot, cabbage, beetroot, cauliflower, capsicum, peas. Of all these potato, carrot and cabbage are must.

Ingredients:

-1 cup grated potato 
-1/4 cup grated carrot 
-1 cup grated cabbage
-1 cup grated other vegs.(opt)
-2 big tomato
-2 big onions
-1 tsp ginger garlic paste
-pav bhaji masala
-salt
-tamarind extract/lemon juice/dry mango powder
-water
-1 root coriander leaves
-1 tbsp oil
-butter(opt)
-sev(opt)

Procedure:

-take all grated vegs in a pressure pan with 3 cups of water and 1tsp of salt and cook on medium heat for 15 min to make it fine paste.
(cook it at and keep ready. but masala you have to make it at the time you eat.)
-take a big wide pan with 1tbsp of oil and heat it.
-add finely chopped 1 onion and saute till it becomes soft.
-add ginger garlic paste and saute till oil comes out.
-add finely chopped tomato and saute till they turn soft.
-add 1tbsp pav baji masala, salt and saute for 1 min.
-drain water from the cooked vegs. into a bowl and smash it as soft as you can. Add this to into the pan and saute for 5 min. 
-now add drained stock and mix well. If necessary add more water. The consistency must be thin than you eat. Check the taste. Add salt or tamarind extract or red chili powder  or masala as per your taste. Cook with continues stiring. when more bubbles are coming
it is ready to serve.
-before turning off the flame fry the bun/pav. Turn the flame of masala to sim and cover it to avoid from becomming thick.
-heat a frying pan. Cut the pav in the middle (horizontally) to make 
2 pieces. Put 1 tsp butter or oil on the pan and fry pav on both sides. colour shouldnt come.
- now take masala in a serving bowl and garnish with finely chopped  onions, corriander leaves and sev and serve it along with fried bun and lemon piece. You can add tsp of butter also on masala.
-now its time to enjoy the pav with masala.

Tips:

-if you like to eat as chat, mix 1 tsp of corn flour in 1/4 cup of water and add to the masala when bubbles are coming. cook for 5 more mins and serve with garnish.
