Tamarind Rice

As I already stated our Andhra is famous for rice items. I hope you enjoyed my previous rice items.Whenever you visit the temple you get pulihora as prasadam.Even at home, to offer God,  the first preference is to tamarind rice. Children also eat without troubling you.

INGREDIENTS

1 cup rice
marble size tamarind
2 or 3 chillies
1 tsp salt
1 tsp turmeric powder
salt

TEMPERING

1 tbsp oil
few peanuts
cashew nuts
1 tsp channa dal
1 tsp split urad dal
1 tsp thill (optional)
1 red chilli (optional)
1/4 tsp mustard seeds
1/4tsp sesame seeds
1/4 tsp jeera
pinch of hingh (optional)
1 curry leaf

PROCEDURE

-wash the rice and cook it with 2 cups of water either in pressure cooker or rice cooker.
-let it cool.
-now make the rice loose. Add salt. Mix well.
- meanwhile soak the tamarind in little water and extract the juice.   Now boil it till it bubbles. Add it to rice. Mix well. It must be little bit sour. 
-take oil in a wide pan (khadai) and heat it. Add  peanuts, cashew, channa dal, urad dal, mustard seeds, jeera, red chilli one by one. Fry them till the urad dal turns into light yellow colour. Now add curryleaf, cut chillies and fry till the chillies turn into pale. Now add sesame seeds and hingh. Add turmeric powder.
-now add this to rice and mix well.
-taste it. If necessary, add salt or tamarind juice.
-ready to eat.

TIPS

-if you want the rice to be like biryani rice, then take 13/4 cups of water instead of 2 cups and add 1 tsp of oil.
 - if you have tamarind puree you can use it.
