Poha (Rice Flakes) Upma
If you are little bit tired to prepare food, good option is upma. Of many types of upma one is attukula upma. In India depending upon the area the style of preparation changes. As my children like this procedure I am posting it.
Ingredients:
- poha (rice flakes) 4 cups
- potato 1 small
- onion 1 big
- tomato 1 small
- carrot 1 small
- chillies 2
- coriander leaves(opt)
- salt
- turmeric powder
- water
TEMPERING
- 2 tbsp oil
- few peanuts
- cashew nuts(opt)
- 1 tsp channa dal
- 1 tsp split urad dal
- 1 red chilli (optional)
- 1/4 tsp mustard seeds
- 1/4tsp sesame seeds(opt)
- 1/4 tsp jeera
- pinch of hingh (optional)
- 3 curry leaf
PROCEDURE
- take 2lts of water. wash the poha pouring the water at a time and drain immediately. Otherwise poha will become paste. Add 1/2 tsp ofsalt to it and keep aside..
- chopp onions, cut other vegetables into small pieces and keep them aside separately.
-take oil in a wide pan (khadai) and heat it. Add peanuts, cashew, channa dal, urad dal, mustard seeds, jeera, red chilli one by one. Fry them till the urad dal turns into light yellow colour. Now add curryleaf, Add cut chillies and fry till they turn into pale. Now add sesame seads and hingh. Add turmeric powder.
- add onions,potatoes, carrot and tomatoes one after another leaving little time to saute.Add salt.
-now add poha and dont mix it. Sprinkle some water and keep a lid . Allow to cook on low flame.
- after 5 min stir it thoroughly. Check poha, if necessary sprinkle little more water. Cook till the potato piece is soft. Later increase the flame and fry for 2 more min.
-add finely chopped coriander leaves.
-taste it. If necessary, add salt
-ready to eat.
Tips:
- use only thick poha
